Apple pie nourish bowl
With Fall comes apples. A delicious and absolutely nourishing fruit!
Eating an apple or two a day can help support a healthy microbiome, normal cholesterol levels, and improvement in heart and metabolic health.
But with Fall also comes cooler temperatures, and digestion tends to slow down—raw foods become harder to digest for some bodies. My body begins to crave more warm, well-cooked foods. Luckily, this fares well for apples. I’m guessing you’ve had the pleasure of eating an apple crisp or pie—the texture and flavor of cooked apples may be, arguable, even better than raw.
Stewing apples on the stove is a simple, quick, and digestion-friendly way to eat apples in the cooler months. And the first bite I took, after pairing these apples with a scoop of grass-fed yogurt and homemade granola…tasted like apple pie with ice cream. It’s become a staple for breakfast, lunch, snack, and dessert. Enjoy!
Ingredients
2 medium apples, chopped into bite-sized pieces
2 TBS filtered water
1 TBS maple syrup
Dash of salt
Dash of cinnamon
Splash of vanilla extract
Organic yogurt
Granola
Optional toppings: pecans, walnuts, raisins, hemp seeds, ground flax seed
Instructions
Combine the water, maple syrup, salt, cinnamon, and vanilla in a small saucepan on the stove.
Add in the apples, and stir to mix. Turn to medium-high heat. After a few minutes, the mixture will begin to bubble. Cover and turn down to medium-low. Simmer for another 5-10 minutes, until the apples are soft.
Assemble your bowl: add a scoop of yogurt, a scoop of the apples, and a handful of granola. Enjoy for breakfast or as an afternoon snack!
Makes 2 generous servings or 4 small servings.
